Random Mondays...

Like I do every year, I think it's about time for a website/blog change. I'll be working on a new design to freshen everything up a bit.

I'm also working on new pricing structures for my packages. Be on the lookout for that, too!

Last night I made some healthier chocolate chip cookies. They disappeared. So I'm making more tonight.


I didn't get a final photo of them fully baked. Here's the recipe for the chocolate chip and oat cookies using almond flour.
First I ground up 6 oz of almonds to make almond flour. I mixed together 1/4 cup of sugar, about 2 tbsp of brown sugar and 1/4 cup of butter. I then added 1 egg. After that's all mixed, I stirred in 1/2 tsp of vanilla. Then I added the flour, 1/4 tsp of salt and 1/4 tsp of baking soda. Finally, I mixed in a handful of oats and chocolate chips. I altered the recipe a bit, but I got it from HERE.

I wasn't trying to make these "gluten-free" and I've heard that some oats don't contain gluten, but they may. I'm no scientist. I'm just trying to cut out certain foods like all purpose flour. I was reading on a website that all purpose flour metabolizes almost as fast as sugar and one cup can convert to 24 teaspoons of sugar. I don't know how accurate that is, but I know there are lots of "hidden" sugars in foods and I'm trying to eliminate those. :-)
